Sandy: I had, what my husband calls, a deconstructed burrito – carne asada, lime-cilantro brown rice, black beans, pico de gallo, corn salsa, guacamole, cheese in a dish, no tortilla. I actually enjoy food served in non-typical fashion. I love hamburgers but when I don’t want the bun, I order it wrapped in lettuce to avoid feeling overfull afterwards. At a Puerto Rican restaurant in town I can get bistec or pollo sandwiches between tostones (fried green plantain) instead of bread which seems even more authentic served that way.
Sandy’s year long journey – going from being a right-hander to left-hander, and Kelly’s parallel trip as a left-hander doing things as a right-hander.
